Banana, Sour Cream and Butter Cake with Brown Sugar Icing

The Cake

Preheat oven to 350F. The cake pan will be placed on the middle rack.

Sift together:

  • 3 c all-purpose flour
  • 2 t baking soda
  • 1/2 t salt

In a large bowl, beat butter until creamy.

Add 2 c sugar and cream together until fluffy.

Add, one at a time, and stirring in between additions:

  • 2 t vanilla
  • 3 large eggs (at room temperature)
  • 4 very ripe mashed bananas
  • 1 cup sour cream or yogurt

Slowly incorporate the flour mixture into the butter mixture.

Add batter to prepared bundt pan and smooth the top.

Bake for about 60 minutes.

Remove from oven and place on a rack to cool for about 5 minutes.

Decant the cake from the pan and allow to completely cool.

The Icing

In a medium-size pan over medium heat:
  • Melt 7 T butter;
  • Stir in 2/3 c brown sugar and a pinch of salt;
  • Cook and stir until sugar melts;
  • Add 1/4 c milk and bring to a boil.

Pour into a bowl to cool for ten minutes.

Stir in butter-sugar mixture and beat well, adding more confectioner sugar if needed:

  • 2 1/4 c confectioner sugar, sifted;
  • 1 t vanilla extract.
Use the frosting before it cools.
