Spanish Rice
Add cooked ground beef and/or reduce tomatoes to one can, if desired.
- Saute in olive oil for 10 minutes:
- One head cabbage, sliced very thin.
- Add and saute for another five minutes:
- 2 c rice, brown or white
- 1-3 onions, sliced very thin.
- Add:
- 1.5 quarts hot water
- Ground pepper.
- Handful currants (optional)
- Simmer until done.
- Add:
- 2 large cans chopped or crushed tomatoes, drained well;
- Salt and pepper to taste.
