Oatmeal Toffee Cookies
The recipe makes a nice firm but not hard cookie. I was at first put off by the very flat slighty-greasy looking tops but decided I was being paranoid. A wonderful taste. And it brings back memories of best friend Jacquie in high school, who introduced me to Heath Bars... I am surprised I have a tooth left in my head.
Cream together:
- 1 c (2 sticks) butter or equivalent
- 2 c packed light brown sugar
Add and beat until well blended:
- 2 eggs
Add and beat until blended:
- 2 t vanilla extract
- 1 3/4 c all-purpose flour
- 1 t baking soda
- 1 t cinammon
- 1/2 t salt
Stir in:
- 3 c quick-coooking oats
- 8 ox (4/3 c) Heath Bits O Brickle Toffee Bits
- 1 c Coconut flakes
Cooking:
- Oven to 375 F
- Dough into 4 parts, each part to make 12 cookies.
- Drop or lightly round batter about 2" apart onto prepared sheet
- 8-10 minutes, or until edges are lightly browned.
- Cool one minute, then remove to wire rack.
